I think the first thing you need to consider is how you are going to sell your birds. Do you live in or near a large metropolitan area? If not, are you willing to ship your birds? Are you comfortable with strangers coming into your home? If not, do you have access to bird fairs near you were you can rent a vendor table to sell your birds? How will you let others know you have birds available? Create a website? Use online advertising?
These are all things to consider - especially since there are probably more Gouldian finch breeders than any other breeders when it comes to finches.

Tammy has given excellent advice. When I go to my local bird mart, which is a big one, there will be more Gouldians for sale than any other finches, followed closely by Zebras and Societies. There are more hookbills for sale than finches. Is there a bird club in your area? Many of the bird shows will allow vendor tables. Since you are only talking 1 or 2 clutches, you could give it a try--just have a backup plan in case you can't sell them. There are sites on the internet where you can post birds for sale.
Just remember, even with only 1 or 2 clutches per pair, with one pair of Gouldians and one pair of Societies, if you only got 4 babies per clutch, you soon have 8 to 16 more birds to take care of (more seed and cages to buy). Gouldians should not be sold till they have colored up, so you are talking 6 months of keeping them in cages at your home till they are ready to be sold.
