What, on average, are the best productive years of finches?
What do you do with your "old" finches?

Just kidding. All of mine are still quite young, but I would inagine one could just retire them to an aviary to enjoy their golden years. Or possibly sell them cheaply ir give them away, to people who would like them as pets.
