When to move chicks and parents into a new cage?
My pair of gouldians have 6 chicks right now. The chicks will probably leave the nest this weekend or early next week. The cage is definitely too small for all 8 birds, but I know I shouldn't move them into a bigger cage while the babies are still in the nest. When should I move them? Should it be shortly after they all leave the nest, or should I wait until the chicks are weaned?

I'd leave them in there until they're weaned, as this is less risky. A change in environment after weaning may also reduce parent-offspring aggression that often follows independence.

I would wait untill they are more or less weaned, or at least untill you see that all the chicks are being fed regularly by the parents once outside the nest.
Regarding the nest: unless you want another clutch in short order, I would get it out of the cage as soon as your last chick flrdges.
Personally I have never seen any aggression by Gouldian parents towards their juvenile youngsters, but others may have had a different experience. In fact I have had some moms use their juvies to sit on the next clutch for them, and help feed their younger sibs once they hatch (which is a great parenting experience for the youngsters for the future).
