Which do you think would be more comfortable/peaceful and easy to keep...

A cage that is 62" L x 20" W x 40" D housing
1) 5 Owl Finches and 4 Gouldians OR
2) 5 Owl Finches and a pair of female Societies, leaving the 4 Gouldians in a cage that is 60" long but only 18 D and 16 H (therefore having two cages to keep up)

I would say that both scenarios would be ok. All the birds mentioned will live peacefully together. The cage is big enough to keep them all. But, i would give them as much space as possible so i would use both cages, especially if you want them to breed.

I'm pretty sure I do NOT want any of them to breed. I initially had thought I would breed them, hence having the Societies to help, but have changed my mind... so really I don't need the Societies...

They should all get along fine especially if your not breeding them.
