My first giant (7 babies) clutch of gouldians are moulting into their colors. I have recently noticed that one has a white breast. It will be redhead green back white breast. Is it safe to assume that the white breast is recessive and both my purple breast parents carry the white recessive gene?

If you have a white breast offspring from two purple breasted parents, then yes, both mother and father bird would have to be split for white breast for you to have any white breast offspring from such parents.

Both parents must be split to White Breast to have a WB chick.
Congratulations! :)
