tcross88 - I feed fresh foods on the floor. Lettuce leaves I just toss in. I have some light tan shallow plant saucers I use for other veggies that also go on the floor. Using the same dish, or dishes that all look the same will help them believe that something new in it they haven't seen before might actually be food. Mine have learned that those are they veggie plates, and as soon as they see me pick one up in the kitchen they start getting excited.
I would suggest sticking with one thing for days in a row until they get used to the look of it and begin to explore. A good beginning would be Romaine lettuce - it seems like almost all birds love that. I don't chop it, but just put in the leaf. For mine, I use the whole big leaf, but that could be scary if they aren't used to it, so I would start smaller than that - part of it.
After they decide they like that, and almost certainly eventually they will, I would only add one thing at a time. I don't know what kinds of birds you have, but you could start a thread asking what those who have that kind of finch find they like best. You will get different answers, but pick one of those. That will give you a good chance of picking something they will like. Everything that looks different is scary to little birds so let them get used to one thing at a time. After a while, with a few things solidly in their menu, and the idea that not everything tasty looks like a seed, you can add new things more freely, and their acceptance of it comes more easily. This at least was my experience.
Also, once you have one or two that eat something, the others will follow.
