I feed rapeseed sprouts to my Canaries, which is about the only way they'll eat rapeseed (Canola). Lately I've wondered about the nutrition of rapeseed sprouts, specifically how much fat they retain after they've sprouted.
It turns out that a researcher wondered the same thing and wrote a paper on it. The results:
Canola sprouts contained 27.3% oil, 25.1% protein, and 10.8% crude fiber on a dry weight basis
For reference, dry rapeseed is reported to have these values: 40% fat, 19% protein.

The researcher sprouted the seeds for six days. I do about the same, except mine are in a dish of soil, outside. The sprouts are deep green when I feed them to the birds, which is different than the researchers sprouts.
Also, my birds eat the green parts, leaving the stems mostly uneaten. That would change the nutritional result, probably.
