Would it be ok to give my finches Quaker's 100% natural rolled oats? I was thinking about mixing it with eggfood or some other wet mixture to make it dry.

I have read that rolled oats are good to give to larger Finches and it is an ingredient in some soft egg food brands. So I would go ahead and give them some and see if they eat it.
Present it to them a couple different ways...just by itself or mixed in with their favorite softfood.

When making homede handfeeding formula (centuries ago!!! lol) I added the dried oatmeal baby cereal or rice cereal to the mix. I would give my Gray a little oatmeal. He ate anything delicious. Love garlic bread but really needed a mint afterwards!!!!!
You could even grind it and ad it to the dry egg food or offer it in a bowl. The steel cut oats are the same thing but instead of rolled and flatten it is looks more like larger grains of rice. Steel cut oats have a nutty flavor to them, those I might try grinding and offering it to them in a treat cup. If they like it I will let you know.

I grinded it up and added it to the eggfood and they didn't even know it was there. My finches will eat almost anything.
