My birds poop has been quite unusual for a couple days now, it has been a light shade of gray and is big round moist ball of poo. I am scared of the possibility of Chlamydiosis and other diseases, please help me. And for some reason they are now courting each other.

I've forgotten what species you have. Are they building a nest, or are they spending a lot of time in a nest? When birds start laying eggs, incubating, etc., they will hold poop for a long time while in the nest, so when they come out for a break, they poop a really large ball of poop. Could it be possible they now have eggs?

Can you get a close up picture of the droppings on a white paper or paper towel. A visual will help.... is this a one time dropping or everytime?

Their poos are normal now, yet there are no eggs. Courting is only happening once in a while (Minimum is once a week). The only stay in the nest for a certain time, they spend half a second to 15 minutes in their nest. I have gouldians. I believe they have mated once, since both of them were in the nest for 2 hours straight. There are no eggs though...
