8 month old gouldians still don't have adult colors
My pair of Gouldians (both black head, normals) had 5 chicks in July 2017. They were all hatched late July/early August (so, about 8 months ago). One male and one female are completely molted and colorful. Another male is mostly there--his body has colors but his head is still olive green and his breast has a patch that isn't colored in fully. Two other chicks are still olive green (including their heads) with very light lavender breasts. They get high quality seed, egg food, and high calcium grit. I guess I'm wondering if the 2 that still look juvenile are just going to stay that way? Can that sometimes be the adult coloring?

No, they will not stay that way.
Keep offering hard boiled eggs, and I would get some Feather Fast and add to their egg or green diet. It will help.
