What size cage are you talking about? It is hard to successfully breed in a community cage unless it is a pretty big flight. If this is the Gouldians first clutch, they may or may not sit tight, with other birds disturbing them. It's a good thing you took out the Zebras, as they would definitely try to take over the nest. You have a much better chance of success if you just have the pair of Gouldians in their own cage.
Once the birds start incubating the eggs, they can be off for short periods of time to eat and drink, but I believe that anything much longer than 30 minutes lets the eggs cool too much. This also depends on the temperature of the room where the birds are. If it is a cool room, the eggs will cool much quicker.
Societies make great fosters, but they usually need to be in breeding mode themselves in order to be coaxed to take over some eggs. And you don't have to have a m/f pair, it can be m/m or f/f. I'm not sure when Society males start singing, but since they become sexually mature at an early age (about 3 months), I would assume they would be singing by then.

Gouldians usually don't start sitting tight till they have at least three eggs, and sometimes not until they are finished laying the clutch. They may not be sitting tight yet. Even once they sit tight, it won't hurt if they are both off the nest for very short periods of time.
