I have a beautiful Gray Head male Lady Gouldian and am trying
to get suggestions on who to breed him with to get more gray heads
Any suggestions?

Genetically he is a BlackHead (BH) SF Pastel meaning he only has one pastel gene. Because he is a PurpleBreast (PB) his body color is a lighter green then the normals. If he were a WhiteBreast (WB) he would have a yellow body.

I personally would breed him with a blue back hen with a black face.
You would get yellows (SF) and yellows (DF) that are split to blue.
Also a good chance of silvers?

You would only get SF pastel/Blue and Green/Blue males. Hens, which are only ever SF, you would get Pastel/Blue (visually yellow) and Green/Blue. You couldn't get DF Pastel because only the male has a Pastel gene and not the Blue hen.
