QUAILS SITTING ON TOO MANY EGGS

Hi I have never had button quail before. I was given six hens and 2 cocks by a mate. They are in a large aviary of canaries and all get along very well together with no fighting etc. All the hens are laying eggs all over the place so firstly is that normal? Also I have a hen sitting on eggs but there are at least twice as many eggs as she can cover so I don't know how many are likely to incubate, if any. Do you normally collect the eggs from the floor as they are laid and throw them away and if so how do you know when a hen is going broody? I would like to try and breed some young just for the fun of it. Any help would be appreciated.
10 Fyfe Canaries (bred a couple) ,2 pair of mosaic canaries,about 20 or so red factor canaries, 8 button quail, 1 fox terrier dogs (Roxi my girl dog died), no mice or rats but holes in the lawn.
