Goldfinches diet

Hi, everyone!
I am new to Goldfinches keeping but in the past two months I`'ve acquired 4 Goldfinches (probably, Himalayan and Siberian), I keep them together with 5 canaries in an aviary 4 feet long, 3 feet wide and about 4 meters high, I offer them canary mix, egg food, hemp seeds, sunflower hearts and both dry and soaked niger seeds, cucumbers, dates, romaine lettuce, sliced oranges but so far I could only spot them feeding on hemp, sunflowers, egg food and the greens and the fruits. Sometimes I offer them boiled rice and they seem to like it too. They seem happy enough, they fly a lot, they fight, they bath, they look healthy and energetic. My question is, since I saw lots of people recommending to feed them niger seeds, how can I get them to accept this kind of food? Do you think that in the future this kind of fortnight cause any health problems?
Next question is about one of the Goldfinches getting bald next day after I bought it. I am not too sure but I think it is a clock, is the king of the aviary, very energetic, eating a lot, not too shy but bald, no feathers on his head. Is this a problem?
