Can canaries be kept in a 2" by 1" mesh cage?

The adults "maybe," but not the chicks.
1" is pretty wide for these smaller birds.
1" x 1/2" is a better size.

I kept societies and my budgie in 1x1 inch, no problems. Canarias may be fine in 1x2

I wouldn't do it. When they are scared and flighty they might try to get through. I had a gouldian managing to get her head stuck between cage bars of a normal finch flight cage. A size where they can potentially try to get through is not advisable IMO.
Walk-in aviary with Waxbills (6 Cordon Bleu, 3 Orange Cheek, 3 Black-rumped, 1 Lavender, ), 1 European Goldfinch, 4 Gouldians, 2 Spice Finches, 6 Owl Finches, 4 Budgies and 2 male Button Quail.
I also have 2 parrotlets, 3 dogs, 1 snake and 3 freshwater fishtanks.
