Hello-
My young spice finches don't seem to be interested in any food but the seed mix I give them. Any way to get them to eat their veggies , short of buying adult finches to show them how?

Sometimes the way you offer the veggies makes a difference. I have found if I just place a piece of broccoli between the cage bars, they are less likely to try it. But if I cut the florets into tiny pieces and serve it in a dish they will eventually check it out. Try sprinkling some seed on top of the veggies as well. Remove their regular seed dish for a few hours to force them to give the veggie/seed mix a try.
