how many days do you know if the hen is done laying eggs after the last egg was laid

Not always easy to tell without looking (which you shouldn't do anyway). Some species start sitting after the third egg is laid, but they may lay more, and some species don't sit tight till they are finished laying eggs.

Usuall the hen will lay 4-6 eggs and when she is in the nest box over night it is likely that she has completed laying her clutch.
